Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lb)
  • 1 tsp salt, plus more to taste
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3/4 cup grated parmesan cheese
  • 1/2 tsp Italian seasoning
  • Fresh parsley, chopped (to garnish)

Instructions

  1. Pat the chicken dry and season both sides with salt, pepper, and garlic powder. If the breasts are thick, slice them in half horizontally so they cook evenly.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken 5-6 minutes per side until golden and cooked through (165F internal). Transfer to a plate.
  3. Lower the heat to medium. Melt the butter in the same skillet and cook the minced garlic for about 30 seconds, until fragrant.
  4. Pour in the chicken broth and scrape up the browned bits. Stir in the heavy cream and Italian seasoning and let it simmer for 2-3 minutes.
  5. Whisk in the parmesan until the sauce is smooth and slightly thickened, about 2 minutes.
  6. Return the chicken (and any juices) to the skillet, spoon the sauce over the top, and simmer 2-3 minutes to warm through. Garnish with parsley and serve.
